Well this dish turned out amazing and I am so happy to have mushrooms back in my life (I really love them and missed them.)

Thanks to Cooks Country for another delicious and simple chicken dinner dish!

Ingredients:
4 skinless boneless chicken breasts
1 lb cremini mushrooms
2 small onions
2 garlic cloves, minced
1/4 cup madeira wine
2 tbsp olive oil
1 can diced tomatoes
bit of fresh (yay for new plants!!!) basil
S&P
1/2 lb. fusilli whole wheat pasta

Directions:
1) Pat breasts dry and season with S&P. Heat Olive Oil in large skillet over medium-high heat until it just smokes. Cook chicken until golden brown (about 6 minutes each side). Transfer to plate.
2) Add onion and mushrooms to skillet and cook until browned (8 mins). Stir in garlic and saute for about 30 seconds. Add tomatoes, wine, and browned chicken breasts-bring to a boil-cover and simmer until the chicken is cooked through: 2-4 minutes.
2.5) Cook pasta in boiling water for about 7 minutes, until al dente.
3) Transfer chicken to serving platter and tent with foil. Simmer sauce uncovered, until slightly thickened, about 5 minutes. Off heat: stir in basil and season with s&p. Add pasta to chicken and pour sauce on top! Enjoy!

OH!! and Laura and I went to the Towson U Drag Show tonight too! HI-larious! Those bitches are fierce! :-D
