Auntie’s Caprese BLT July 28, 2008

This was my third vacation dinner in Thompson’s Point, VT made graciously by my auntie Helen.  She is an avid reader of s.i.p and I am so happy I get to post one of her creations!

This was a fantastically delicious Italian take on an American classic.  It was composed of ciabatta bread, a basil aioli, vermont maple bacon, balsamic marinated locally made mozzerella and fresh tomatoes!  We made 5 whole sandwich loaves and after three hours of insanely laborious work, we were finally able to eat!

Provençal Pissaladière Barefoot Style July 23, 2008

You see this? I made a pizza! From scratch! Life has been crazy recently, and not so much of the ha ha crazy kind…but life goes on and we make it through. and sometimes we just make it through with pizza!

This comes from Barefoot in Paris and it was definitely an interesting and tasty flavor combination. I love sweet onions, olives and mushrooms and this hit the spot. Maybe next time I make it I will try to do the crust a little thinner and get the good olives from Wegmans (not just the canned kind) and add some more thyme and salt!

Mangoeelicious Mango Cupcakes July 9, 2008

My mentor at work is retiring tomorrow and she has been such a huge help to me in the past several months while I go through my learning curve! She is Filipino and LOVESSSS mangoes, so I thought I would do something inspired by that wonderful fruit!

I got the mangoes from wegmans and it turns out that two out of the three were ripe! I hear you are supposed to smell them (for a hint of mango fragrance) and make sure they are kind of squishy to tell if they are ripe or not. The cupcake recipe comes from the wonderful Mr. Garrett and the buttercream comes from the lovely Ms.Melody who has a very fun site! The cake recipe had a delicious flavor (although I should have cooked mine about three minutes longer…they shrunk) and the frosting was so tangy and went well with the rich cupcake!

Feel good food is definitely in need right now. Cause you know why??? BOYS SUCK! Thats why I am so glad it is Independence Day!!

But other than that life is quite lovely right now. :-D I was inspired by Miss Julie after seeing her leeks at the JFX farmers market last Sunday and I have been rereading Julie & Julia (and this was her first julia attempt!). This recipe is so simple and incredibly delicious and savory.

This past weekend my dad and very good friends went rafting on the lower youghiogheny river! But no thank gosh- there was NO drowning, only good times!

My dad is super kayaker and so he was wonderful enough to be our rudder in the huge raft! We headed out on Friday night and got to partake in some campfire deliciousness and had some good eats on Saturday too!

Above is one of the many smores that were devoured! Yay for sticky chewy messy and gooey things! and thank you Erica for bestowing the smores goods on us!
