Chicken Caesar Salad
August 12, 2008 at 7:32 pm | Posted in Dessert | 2 CommentsMonday night’s dinner was simple, quick and delicious! I have been making caesar dressing from scratch for a while now (thanks to my New Best Recipe cookbook!) and it is FAR superior to those little packets that come in bags of salad!

1 bag romaine lettuce
1.5 chicken breasts, sliced into 3 pieces
1/2 cup freshly shaved parmesan cheese
1 egg
1 tsp worchestire sauce
1 tbsp lemon juice
1/3 cup olive oil
s&p 1/4 tsp
1 clove garlic, minced
1 tbsp honey
1) Boil 2 inches of water in a small sauce pan and cook egg (with slotted spoon… yay for slotted spoons) for 45 seconds.
2) Combine garlic, lemon juice, worchestire, s&p and egg yolk. Whisk well and then slowly pour in olive oil.
3) Season chicken and drizzle some honey over each piece. Heat up mr. george foreman (I know this is crazy…) and cook each breast for about 3 minutes.
4) Add cheese to salad and drizzle with dressing, mix well to coat. Plate salad, top with chicken and a bit more cheese!

I made it for dinner last night for me and Bob. We loved it! Perfect, simple dinner for middle of the week. The honey on the chicken was a great idea…. Yummy…
