Dinner for One – Asian Style

In an attempt to eat through my pantry a bit, I found some old soba noodles and went searching for a recipe to make for a dinner meal for a few nights. Naturally, I went searching on Deb’s site and found this recipe, Spicy Soba Noodles with Shiitakes.

It was amazeballs. Stole that word from Bethenny Frankel- love that girl! Love the flavors from the ginger and soy sauce. Love the textures of the edamame and the napa cabbage. And the addition of green onion and mushrooms didn’t hurt either!

Cooked the soba noodles with the edamame in the big pot. 6 minutes.

Chopped up some baby bellas and some shiitake mushrooms, there weren’t many shiitakes loose at Wegman’s so I upped the mushroom ante with the baby bellas. I couldn’t tell the difference when all was said and done in the mess of noodly heaven.

Napa cabbage – I’ve never bought this before. Loved it. So pretty and fresh and tasted so good slightly cooked in the sauce.

Why are soba noodles so good in my opinion?? Cause they had lots of asian flavors soaked into them and this dish was a perfectly easy one to showcase them. I left 2/3 of the recipe in the fridge over the next two days and the flavors got even better (although it did get soggier, but it was still good).

I will most certainly make this again!
