Well hello there!!! Isn’t this fun to be waiting four months between posts, ha! Yup, it is what it is. I can assure you and myself that I’ve been having a grand ol time in between all of these sporadic posts. What motivated me to write today was a delicious dinner I made some Saturdays ago thanks to Food Lion. Other than that meal, I’ve been making mostly simple things with lots of veggies, still packing up huge salads for lunch, and even started making kale smoothies last week for breakfast? And what does this mean? I’m eating vegetables for every single meal!! And what else does this mean? My clean eating is showing on me everywhere! It’s a beautiful thing when you have energy, like a lot of it, all day long, My bod is getting toned and my skin is pretty darn clear. It sounds cliche, but I think I’m in the best shape I’ve ever been in and I have the most challenging and rewarding job now. I’ve been saying to myself – this – this life right now – it can stay just as it is. There is nothing else I could ask for right now. 😀
And how happy was I, when I got an email from Food Lion PR saying, we would love for you to cook something up with our new line, on us! My buddy Anna and I went strolling throughout the aisles of Food Lion that Friday night and had a grand ol time. There are so many things that the My Essentials brand encompasses. I would say this meal that I made was fun and tasty.

Happy Friday Ya’ll. I got some unfortunate news on Wednesday and rightly so threw myself a pity party about it. But then came Thursday morning and the sun was shining and my sad mood went out the window. Life is not going to go the way we think it will always! And it just reminds me to make this life, this current situation the best it can be. There is no need to wait for things to change to make myself happy or healthy. This song has been making me very happy currently…
So on that note, there are a couple more moments from vacation in Vermont that I can share. The last full day of Vermont, the sun was shining so bright. I got some rays and chilled with Jen by the shore and planned my dog sitting for Annie.

Happy Wednesday, no wordless today, lots more vacation to share! So after we shared some pre-wedding wedding cake, there was some fireside lounging and then later we all played Mafia! Awesome crazy family “card” game. It’s really just an excuse to accuse each other of things. 😀

Holla at yer boy!!! Sometimes when there is nothing to say, I like to say that. Riiight??? I think I pulled it from Project Runway Season 5 or something. There has been a hiatus. That is clear, but what may or may not been clear is that I have been having a grand time while away from this blog. Vacation was perfect, things are changing up at my current job and for the time being they are entertaining, possible future employment options are still in the air, and then there’s this boy. This boy likes to take me out to dinner, and I like to cook for him.. its win win!
So the weekend before I dashed off to Vermont, a Friday night started out with roses and then a sushi feast was had at China Garden.
You might be thinking, what. is. up. with that building front?? I know, it scared me too. From many drive by’s I had judged it. The boy, aka J-dogg, convinced me they had good sushi. I thought I would take his word for it and so we feasted.. Check it out below.
Well Happy Monday to everyone! Mine turned out happier and much more productive than I could have ever imagined and here I am actually writing a blog post on a Monday. Hot Damn! So aren’t I a lucky girl to live within walking distance of the new Volt restaurant (actually diner…)- Family Meal. And I have been there two times already! I slowly watched this old car dealership be transformed into a really cool space over the past 7 months. It has been awesome.
Bryan Voltaggio is so dedicated to his hometown of Frederick and that is shining through more and more with everything he does. I had a nice date night with a man I would like to affectionately call J-dogg on a Saturday night and I took the Abuelitos for an early Sunday Supper yesterday! Well helllloooo everybody. I’m back! I’ve been cooking and dessert making and going out to some nice dinners recently! Things are still in flux in some aspects of my life and some others are starting to shape up nicely. Either way, next week I gotta get my booty to the pavement or gym and workout because of all these lavish meals! So speaking of lavish, last Friday night I dined with Joanney and Alayne and we had a really fun night on the town. Since June cookbook club was postponed to become July cookbook club, we needed to have some fancy eating girl time. This new restaurant in Canton was the perfect place to do that.
Fork & Wrench, just from the name it sounds all industrial and cool right? They tote that it has a mix of college science lab and pharmacy too, which makes it right up my chemistry loving alley.We had outstanding dishes that night… go for the jump to see em.
Happy Fourth of July!
I have spent a good amount of time with Daddy and Abuelito so far this summer and that makes me very happy. The beginning of June I took over as nurse for Papa after his knee surgery and fed him lots of fresh meals! This one shown here was our first al fresco meal at the Jarrettsville house in a LONG time. Me and Laurita had fun setting it up.

Easy Chicken enchiladas is right! Or I could call this post food Elizabeth actually eats during the week. So yup, I got home from a weekend full of grandma & mommy time and good girlfriend time and had time to prep this for the oven for tonight! I paired it with sauteed kale, the vegetable that I have been eating with dinner for the past three months! And boy was it nice eating outside tonight. Soooo breezy and beautiful here in Frederick.
Super easy- whatever tortillas you like, whatever shredded cheese you like, two cans of enchilada sauce (green and medium for me), plus shredded rotisserie chicken, sauteed with a white onion, can of diced green chiles, 6 sliced up olives. I layered up all of those ingredients and heated it at 350 for 30 minutes! Ahh I love food for a week. It’s really cause I’m lazy after work… So what else is going on?? Our sweet baby Lils had an achievement today!! Walked 4 steps in a row!!! YAYYAYAYAYAYA.
