Tomato Watermelon Gazpacho

Laurita was a little skeptical when I started making this at 10:00 on Sunday night, but she went along with it and even helped destroy the watermelon! Thanks Laurita! But wow this turned out great and the fact that all it took was a little bit of chop work and use of a blender sold me for sure!

I don’t think I ever made something so delicious and elegant that required no cooking! The sweetness of the watermelon is offset by the tangy red onion and flavorful dill and all the flavors really sing with the tomato base! This recipe comes from Tyler Florence and I am so happy that I am peering into that cookbook more frequently every day. He does great seasonal dishes.

Oh Happy Day!

So yesterday I felt energized enough to try to make it to the apartment pool right after I got home from work and before I made dinner!  The pool you see, is very good for helping to recuperate my knee!  Well I wobbled over to the top of the hill to peer down to see if it was open and as I walked closer, whatever did I see, but some red dots adorning some bushes! After closer inspection I deduced that those were not just any ol red dots, they were FRESH RASPBERRIES!! :-D Check out one of the bushes right here.

So this post has nothing to do with me cooking anything, but I daresay this will probably be the food highlight of my week, (that and my amazing soup that I made, stay tuned for Thursday!)

Ina’s Honey Vanilla Pound Cake for the 4th!

On Sunday I was craving some kind of dessert and realized how beautiful the berries looked in Wegmans! I got three kinds and then picked up some marscapone cheese. Conveniently on the package for the cheese is some pairing suggestions, and one in particular struck my fancy: honey!

So on Monday and Tuesday I paired those scrumptious berries with the honey-marscapone concoction and was pleasantly delighted with my delicious dessert! But then Ina snuck in… Laurita left the Back to Basics on the coffee table and I went perusing and found this recipe! The lure of being able to use honey and my vanilla beans made this an obvious choice and something extra delicious to pair with the berries and marscapone!

So Happy 4th of July everyone! Hope you are celebrating with some good eats!

A Hop, Skip and a Jump to G&M

A couple of Sundays ago, Ned stranded himself at the airport for a couple hours (keys in checked bag that did not accompany his flight! :-o ).  Since he was starving and I was very much looking forward to eating dinner with him, I suggested that I swing by and pick him up and then voyage over to the airport’s closest restaurant! G&M! Lucky for us the wait wasn’t too long and the crabcakes were pretty darn good.

It’s always an interesting thing hearing from Baltimore natives as to where they feel they get the best crabcake! I think Faidley’s may still have our #1 choice, with G&M in close second! Where is your favorite place?  Check out the monster below!

June Daring Baker’s Challenge: Bakewell Tart

I was a little unsure about how this challenge would turn out, because I saw this as a nut pudding tart…but it was far from just that! The pastry crust turned out great and the jelly filling added a nice little zing, and the pudding!- well I baked the whole thing so that it didn’t stay pudding and I was happy with that!

The June Daring Bakers’ challenge was hosted by Jasmine of Confessions of a Cardamom Addict and Annemarie of Ambrosia and Nectar. They chose a Traditional (UK) Bakewell Tart… er… pudding that was inspired by a rich baking history dating back to the 1800’s in England.

Well that title comes from the first joke (or near abouts) that Ned ever told me. He’s a funny one, no?? :-D I actually do like Thai, (not shirt…) ALOT!

So this recipe is an adaptation from a Bobby Flay showdown we saw a couple of weeks ago. Because of that episode, Ned and I hobbled (well I hobbled) into Ikea and picked up an $8 wok! Quite the buy! Last monday night Ned slaved in the kitchen while I reluctantly sat on the couch to prop up my sore knee. The dish was fantastic! I want to make this every week! Check out the recipe below…

Sabor con mis abuelitos

The last night at my two week long stay at Grandma’s house- we decided it would be enjoyable to go and have a nice little feast on the town at Sabor! Well the town wasn’t too far away… actually like 300 feet away! We didn’t walk though, since walking isn’t necessarily my strong point right now in time.

This restaurant continues to impress and delight my grandparents every time they visit and it definitely impressed me! I can’t wait to go back with Ned sometime soon. Check out our dishes below…

My Last Supper

It was my last supper with a broken ACL… sweet Ned declared that he would cook me a delicious last meal the night before my surgery and that happens to be exactly three weeks ago! It had been awhile since we made risotto and asparagus was still in season then- so there we go!

It was quite tasty and I washed it down with some white Côtes du Rhône! Probably too much white wine..but alas I digress… Ned and I always have a feisty discussion of how to incorporate vegetables in a risotto dish, he likes to puree the vegetables and also add them whole, but I like the veggies solely whole! He won this battle because he was the one actually cooking! Check out the recipe below…

Holy Freaking WD-50

As a perfect finale for the NYC wedding weekend (definitely the best weekend I have had in a very long time) we made a reservation for WD-50 for Sunday night and lucky for us our friends Jonathan and Melissa (our favorite new NYC foodie friends) joined us for the adventure.

Even though we were seated about 45 minutes late, the kitchen 100% made up for it with amazing service and extra little treats for us. We ended up staying there for about three hours and even got to see the kitchen and meet the crew. So as tonight is the premiere of Top Chef Masters I would like to say “Go Wylie!” From what I can see and taste of your talent, you are going to rock that competition!

NYC Memorial Day Brunch at Penelope

Hello?? Anyone out there in the cybersphere!? So I’m not dead! I actually have a new bionic ACL- thank you Dr.Detterline. So the weekend before the knee extravaganza went down I joined Ned on a trip to NYC for a fabulous wedding that he was in. On our last morning there we joined our friends for a nice brunch at Penelope- which, by the way, is a charming girly farmhouse-esque delicious breakfast spot.

Ned had some eggs and of course I had to choose the french toast (nutella stuffed- yummmm) and we toasted to the whole amazing weekend with some delectable mimosas. Check it out below!
